
Poutine is a Canadian answer to cheese fries; it uses cheese curds, gravy, and chives on top.
I thought curds would look like ricotta or feta crumbles, but nope! They were breaded, fried and deliciously gooey. I was dreaming about them two days later.
The handcut fries are not greasy and limp, they have the heft of a skinny steak fry.
